Recipe for Kids: Vermicelli Upma/Masala Noodles

Kids love anything fun especially if their food looks playful. My son loves anything that has pasta or strings because it's fun to eat it. So, recently, I made Vermicelli Upma or you can call it Masala Noodles without the added preservatives and sodium.  You can serve this as breakfast or lunch.  It's super easy to make and tastes good. It sounds like you need a lot of stuff and takes long but it really doesn't take too long. 

I am sure your little one will love it and hopefully you will too.  For this recipe you'll need the following ingredients: 

* Tomatoes, onions, yellow or red bell peppers. Honestly, you can add any vegetables your little one likes.Also, add as much as you like
* 1 Teaspoon Urad Daal
* 2,3 Curry Leaves.  Totally Optional
* 1 Teaspoon Cumin Seeds
* 1 Tablespoon Oil
* Salt
* Pinch of Sugar
* Pinch of Turmeric Powder 
* Half teaspoon of Chili Powder
* Half teaspoon of Ginger
* Vermicelli or Rice Noodles 
* Warm water

Method: 

-> Heat up a Pan
-> Add Oil and let it heat up
-> Add Cumin Seeds, Urad Daal, Vegetables, Salt, Sugar, curry leaves, Turmeric Powder, Chili Powder and Ginger.  Let it cook for 2 minutes or till all the vegetables absorb spices and cook (medium Heat)
-> Add Vermicelli or Rice Noodles
-> Saute for about 2,3 minutes on medium heat so they start to turn a little brown
-> Add  warm water till it covers all the vegetables and the vermicelli
-> Keep Stirring every 2,3 minutes so nothing sticks to the bottom
-> Cook for about 5 to 7 minutes or till the Vermicelli doubles in size.  You will see a difference because they look bigger and fluffier.  
-> Mix and Serve
